My Go-To Recipes for Those Crazy Busy Days

We’ve all been there – staring into the fridge at 6 pm, feeling overwhelmed by the thought of cooking a full meal after a long day. Dinner needs to happen, but the idea of spending hours in the kitchen feels impossible. That’s why I’ve curated my collection of go-to recipes – dishes that are quick, easy, and satisfying, perfect for those hectic days when time is truly limited. These aren’t just thrown-together meals; they’re genuinely delicious and reliable standbys that save me (and likely will save you!) from ordering takeout.

1. Sheet Pan Lemon Herb Chicken & Veggies

This recipe is a lifesaver! It’s ridiculously simple, requires minimal cleanup, and tastes amazing. The beauty of sheet pan dinners is their versatility – feel free to swap out the veggies based on what you have on hand.

Ingredients:

  • 1.5 lbs Boneless, Skinless Chicken Thighs (or breasts, cut into smaller pieces)
  • 1 lb Baby Potatoes, halved or quartered if large
  • 1 lb Broccoli Florets
  • 1 Red Onion, sliced into wedges
  • 2 tbsp Olive Oil
  • 2 tbsp Lemon Juice
  • 1 tbsp Dried Italian Herb Blend
  • 1 tsp Garlic Powder
  • Salt and Pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potatoes with 1 tbsp of olive oil, salt, and pepper. Spread them in a single layer on a baking sheet lined with parchment paper.
  3. Roast the potatoes for 15 minutes. This gives them a head start so they cook through properly.
  4. While the potatoes are roasting, toss the chicken with the remaining olive oil, lemon juice, Italian herbs, garlic powder, salt, and pepper in the same bowl used for the potatoes (less dishes!).
  5. After 15 minutes, add the broccoli and red onion to the baking sheet alongside the potatoes. Arrange the chicken pieces evenly over top.
  6. Roast for another 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the vegetables are tender.

Why it’s a go-to: Minimal cleanup – one sheet pan! The lemon herb flavor combination is bright and delicious, and you can easily adapt it to use different veggies.

2. 15-Minute Black Bean Burgers

Forget complicated burger recipes that take forever. These black bean burgers are ready in a flash and packed with flavor and protein. They’re also great for vegetarians or anyone looking for a lighter meal option.

Ingredients:

  • 1 (15-ounce) can Black Beans, rinsed and drained
  • ½ cup Cooked Quinoa (or brown rice)
  • ¼ cup Chopped Red Onion
  • ¼ cup Chopped Cilantro
  • 1 tbsp Chili Powder
  • 1 tsp Cumin
  • Salt and Pepper to taste
  • Burger Buns & Toppings of your choice

Instructions:

  1. In a large bowl, mash the black beans with a fork (leave some texture – don’t puree them completely).
  2. Add the cooked quinoa, red onion, cilantro, chili powder, cumin, salt, and pepper to the mashed black beans.
  3. Mix well until all ingredients are combined.
  4. Form the mixture into 4 patties.
  5. Heat a lightly oiled skillet or grill pan over medium heat. Cook the patties for 3-5 minutes per side, or until heated through and slightly browned.
  6. Serve on burger buns with your favorite toppings.

Why it’s a go-to: Seriously fast! The quinoa acts as a binder, making these burgers hold together well without needing eggs. Plus, they’re full of healthy fiber and protein.

3. Speedy Shrimp Scampi with Linguine

This is my “I need something delicious *now*” recipe. It feels fancy but takes less than 20 minutes to make.

Ingredients:

  • 1 lb Linguine Pasta
  • 1 lb Peeled and Deveined Shrimp
  • 4 tbsp Butter
  • 3 cloves Garlic, minced
  • ¼ cup Dry White Wine (optional – chicken broth works too!)
  • 2 tbsp Lemon Juice
  • Salt and Pepper to taste
  • Fresh Parsley, chopped (for garnish)

Instructions:

  1. Cook the linguine according to package directions. Reserve about ½ cup of pasta water before draining.
  2. While the pasta is cooking, melt the butter in a large skillet over medium heat. Add the garlic and cook for 30 seconds until fragrant (don’t burn it!).
  3. Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through.
  4. If using white wine, pour it into the skillet and let it simmer for a minute or two to reduce slightly.
  5. Stir in the lemon juice and drained pasta. Add a little of the reserved pasta water if needed to create a saucy consistency.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh parsley before serving.

Why it’s a go-to: Shrimp cooks incredibly fast, making this dish come together quickly. It’s satisfying, flavorful, and feels like a treat without being complicated.

4. One-Pan Quesadillas

Okay, these are *really* easy! Perfect for a quick weeknight meal or a late-night snack. The beauty is that you can customize them with whatever fillings you have on hand.

Ingredients:

  • Large Flour Tortillas
  • Shredded Cheese (cheddar, Monterey Jack, or your favorite blend)
  • Fillings of your Choice (cooked chicken, black beans, corn, salsa, veggies – anything goes!)

Instructions:

  1. Heat a large skillet or griddle over medium heat.
  2. Place a tortilla on the hot surface. Sprinkle with cheese and your desired fillings.
  3. Top with another tortilla.
  4. Cook for 2-3 minutes per side, or until the cheese is melted and the tortillas are golden brown.

Why it’s a go-to: Barely any effort required! This is ideal when you’re truly short on time but still want something warm and satisfying.
